It takes its name from the town of Selles sur Cher in the Loir et Cher.
Its grayish appearance comes from the dusting carried out with a mixture of salt and vegetable charcoal during its refining.
This method leads to a regularity in the undeniable final product.
Very nice contrast between the black of its surface and its perfectly white paste.
