Bleu de Queyras comes from the production of producers grouped together in a cooperative.
This blue-veined cheese is made in the massif of the same name (Queyras).
The milk comes from hamlets around Rochebrune and the cheese is refined in the caves of the old town.
There is only one producer left in Arvieux (Hautes Alpes) which manufactures all year round.
RARE !!
Mild flavor when young.
It can take on a distinctly full-bodied and aromatic character after a longer ripening.
