Lively, airy, salivating, with perfect balance ... this cuvée represents the archetype of the Pierre Gimonnet et Fils style. Each year, we use all the wines we need to reproduce this House style: it is the priority cuvée of the Estate. To do this, we make sure to marry very subtle wines of the year with reserve wines of several years.
Grape varieties: 100% Chardonnay, Terroirs: Cuis 1er Cru - Côte des Blancs.
Blend N ° 189: from 5 harvests: 70% from 2016 (including 12% from excellent 1st sizes), 5% from 2015, 10.5% from 2014, 5% from 2013, 9.5% from 2012
Vinification: Manual harvest and fractional pressing, Cold settling, Thermoregulated alcoholic fermentation, Malolactic fermentation,
Aging in tanks for 6 to 8 months, Reserve wines kept in bottle (very
rare), Cold stabilization (-4 °) and clay filtration
