Can we eat the cheese rind?

Crust or not crust? The question is asked and the answer is less obvious than it seems. From Paris cheese dairy and delicatessen in Athens helps you sort through the crusts.

Well, as much to say, this article will not change the opinion of the supporters of rindless cheese. For others, a nuanced answer is necessary because the crust represents a real taste interest and filled with probiotics strengthens our immunity.

The thin rind of bloomy rind cheeses such as Camembert, Brie de Meaux, Brillat Savarin can be eaten with your eyes closed. It brings a complementary chew to the dough.

Just like the rind of typical washed rind cheeses, Munster, Georges, Langres… The rind is generally thin and therefore digestible. It reinforces an already pronounced taste, which is what we look for in this type of cheese.

On your blue cheeses what you find outside you have it inside. Except on thicker crusts on the blue of Vercors Sassenage for example, go for it! As with Roblochon or Saint Nectaire where it would be a shame not to eat them.

On hard pasta, our crusts end up in the trash. It does not provide any added taste value and is simply unfit for consumption.
